Episode XXIII: Shout-outs and The Sous Vide Experiment



Greetings!

This week we share some insight on where to look for support outside of Connect or your meeting rooms. There’s a whole big community out there if you look for it!

We also give a recap of the Stan’s Donut 5K race that we ran over the weekend. What a fun themed race this was! We recorded a little video, and will be posting that soon.

For the Weigh In, Greg shares how he’s doing. Tab still hasn’t had her monthly Lifetime weigh in, yet, but seems to be holding pretty steady.

In the Freestyle, we talk about “Cool Moves” and how to keep active in the hot summer months. Also: don’t hate on sweating! It’s awesome!

In the Recipe Corner, we have a double header.

First up, our review of the Anova Sous Vide Precision Cooker.

We cooked a flank steak first, adding about 1/4 cup Trader Joes Cold Pressed Green Goddess Salad Dressing, salt, pepper, 1 tsp garlic powder and 1 tsp dried onions. From frozen, we cooked it at 131 degrees for 2 hours, then seared it 2 minutes per side in a cast iron skillet.

It. Was. Perfection.

Next we cooked 4 eggs at 146 degrees for 45 minutes. Most recipes suggest simmering the finished product for an additional couple of minutes, since the outer part of the egg white stays pretty loose still after the sous vide poach. We have to agree that this would be a good idea. Alternately, we’ll try poaching in sous vide for a minute longer and/or turning the eggs out onto paper towel before placing the finished product on toast.

The yolk of these eggs was magical.

And our other recipe – Greg’s Buffalo Chicken Salad

It’s super simple. We use pre-prepped chicken strips from Costco and bagged kale salad.

  • 3 – 4 oz Chicken strips
  • I Can’t Believe it’s not Butter Spray
  • Frank’s Red Hot Sauce (to taste)
  • Bagged Cruciferous Crunch or other kale/brussels salad.
  • Low-fat Blue Cheese Salad Dressing

Warm up the chicken, spray it with butter spray and toss it in hot sauce. Toss salad greens with blue cheese dressing.
Top the greens with the warm chicken, toss, and serve.

That’s it. Simple!

Episode XXII: Simply Filling & Sprengel Plan Review (plus another Giveaway!)



Hello friends!

We start this episode with a recap of our Rock’n’Roll 1/2 marathon recap – how did we do? Did we meet our goals? We definitely had a great time, and recommend the races to folks who want to try running at any distance from 5K to full marathon.

We share our thoughts on the pros and cons of what we’re doing and whether or not we’ll keep following these plans. (For the record, it can be tricky to find a lot of information about Simply Filling on the WW websites, so do some digging, ask around on Connect, and use the Help feature on your app. When in doubt, you can always ask your leader for information.)

Episode XXI: The Big Sugar Controversy! (and new Archer Farms Ice Cream flavors)



Hello friends! We hope you had a great week! We’re back with Episode 21 – or XXI if you’re Roman.

This episode we share about an activity we participated in – an Historic Fun Run about the Great Chicago Fire hosted by Fleet Feet Chicago. We learned a lot about the fire, and Chicago while burning a lot of Activity Points – win/win!

Would you believe we actually went to WEIGH IN this week? We share how it went.

The Freestyle Weekly topic was “Be Sugar Savvy”. It was very controversial in our meeting room – was that the case in your meeting room as well? We dig a little deeper and try and figure out why – bear in mind we are not doctors, we’re just trying to understand the topic. Weigh in with your own opinions.

In Recipe Corner, we share a “scandalous” recipe for Pasta Puttanesca. We don’t have the rights to reprint it, but we share the details on our podcast, so have a listen. It’s honestly just “throw a bunch of salty stuff in a pan and add cooked spaghetti”, but slightly more refined. You can also find it in the “Yes, Italian” cookbook from Weight Watchers, or by clicking this link directly to the recipe on the Weight Watchers website.

And did you know that Archer Farms (of Target Fame) has it’s own low-sugar, high-protein ice cream now? Well, we tried 4 of the flavors and we break them down for you. (Spoiler: they’re GOOD)

Episode 16: The Simply Filling Experiment



Hey folks! Are you ready to hear about Greg & Tab’s experience at the Night Nation Run in Chicago? Well, buckle up and get ready to laugh along, because they have opinions about it! So many opinions.

Episode 15: Wifetime Lifetime?



This week, we hear how Tab’s last minute race – the Cinco de Miler turned out. Spoiler: it was a lot of fun, and there were tacos and epic race photos – which for some reason we can’t upload here. We’ll post them on Insta.

Greg and Tab also share how their first BBQ of the season went. Were they successful at keeping points-friendly? You be the judge.

Moving on to the Weigh In: this is Tab’s final week of Maintenance. Does she make Lifetime? (If you follow Tab on Connect, you already know!)

In the Freestyle section, we go over the idea of what to do “Instead of Eating”. This is always a challenging topic, so we’d love your feedback.

In Recipe Corner, we revisit the cookbook: Run Fast, Eat Slow and share their easily adaptable Fish Tacos with Mango-Avocado Salsa. We cut the olive oil, and used an Ole Wrap instead of corn tortillas, but this was a quick and easy meal that was packed with flavor. Episode 14: Ramping up for Spring



Hi friends!

In this week’s intro we talk about how we’re introducing different kinds of activities into our workouts (and lives), and spend a minute acknowledging that some of you are interested in talking about healthy fats, and what that even means for our journey on Weight Watchers. We’re going to dig into that topic a little more in coming episodes.

We also have a very drama-filled weigh in for you. Tab is on week 5 of Maintenance, how’s that going? And even more dramatic – how was Greg’s first weigh in as a Lifetime Member?

The Weigh In also leads us into our Freestyle talk, where the topic is Scale Standoff – how to handle a plateau. We’ve talked about this topic a lot lately, and this week we reinforce the tools you can use.

Greg’s at the Farmer’s Market

Greg took a trip to our local Farmer’s Market for the new segment “Farmer’s Market Finds”, and came home with a bunch of ramps. What are they? What do they taste like? How do you use them? We’ll let you know!

What we did differently: We replaced the almond flour with Quest Multipurpose Baking Mix, and instead of frying the cakes in oil, we placed them on a pan in our air fryer and cooked on 4 minutes per side.

They were so delicious, we ate them up before snapping a picture. What’s wrong with us?

Little bits of advice we have to keep your gatherings on the Weight Watchers-friendly tip. We’re just getting started on this topic. We want your feedback so we can all plan for success this summer and make it the best season yet!

In Recipe Corner, we get you started on your healthy BBQ season by encouraging you to adapt this Martha Stewart New England Grilled Seafood Bake by trimming back the butter and/or using Brummel and Brown instead. It’s one of our favorites because it’s so easy, but it tastes so decadent. We’ve used salmon and cod in this packet, and they’re both equally good. Try your own favorite fish!

Episode 12: Four Recipe Corners make a Recipe Room

How is Greg maintaining on Lifetime and how is Tab handling Maintenance on her way to Lifetime, you ask? Find out in this week’s Weigh In segment.

The Freestyle for the week suggests you just “Eat what you Want!”, and we talk about what that means for us, and how we manage it by keeping it as part of our lifestyle.

And finally, the moment you’ve been waiting for. We pull away the plastic protective covering on this renovation – we have a Recipe Room! Four recipes we’ve been tried out – references to original recipes sources are included. No affiliate links here for the books, just good old fashioned word of mouth cause we’re fans.

Artichokes from Love & Lemons
  • 4 regular or 8 baby artichokes
  • 1 lemon
  • 3 tsp olive oil
  • sea salt
  • freshly ground pepper
  • chili pepper flakes

Preheat oven to 375

Clean and prep artichokes by trimming off leaves and cutting back the stem
Cut in half lengthwise and carve out choke.
Place cleaned artichokes in bowl of water with juice of lemon plus the quarters of the same lemon until ready to use.
If baking in a dish, brush dish with one teaspoon of olive oil.
Cover artichokes with remaining two teaspoons of olive oil and season to taste with salt, pepper and chili flakes.
Toss to coat completely.
Place artichokes in baking dish, cut side down. Place quartered lemon in baking dish as well. Cover dish with aluminum foil, bake for 45 minutes for full sized artichokes, or 25 – 30 minutes for baby artichokes.
*air fryer attempt – wrap 2 artichokes and 2 lemon wedges in aluminum foil. Poke holes in the foil and cook 8 minutes on high, flip and then 5 minutes on high on the other side.*

Chocolate Chick Pea Cake adapted from Katie_Donnelly_wwjourney
    • 14oz can of chickpeas, drained & rinsed
    • 3 eggs
    • 1 1/2 cup Pyure Organic Stevia
    • 1/4 cup cocoa powder
    • 1 tsp vanilla extract
    • 1/4 cup 0% Fage Greek yogurt
    • 1 1/2 tsp baking powder

Blend the chickpeas in a blender with a small amount of water (a few tablespoons, just enough to get them moving in the blender) or mash them by hand until smooth.
Whisk together the rest of the ingredients, minus the baking powder.
Add chickpeas to the rest of the ingredients and whisk.
Add baking powder and whisk.
Pour into 8×8 pan (greased or lined with parchment paper) and cook for 25 – 30 minutes at 350.

Herb and Parmesan Crusted Cod from Run Fast Eat Slow
  • 4 x 4oz filet of cod
  • 1/3 cup fine corn meal
  • 1 egg
  • 1/2 cup finely grated Parmesan cheese
  • 1 scoop Quest Multipurpose baking mix
  • 1 tsp dried oregano
  • 1tsp dried thyme
  • salt
  • pepper
  • cooking spray

Rinse cod filet, pat dry with paper towel.
Sprinkle both sides with salt and pepper
Line up 3 bowls. Cornmeal in 1, whisked egg with a TBSP of water in the second one. In the third bowl, mix parmesan, protein powder, oregano and thyme.
Dredge each filet in cornmeal on all sides, then dip (or brush) with egg, then press into the parmesan mixture on all sides. (discard the leftover coating mixture).
Spray both sides of the coated filet with cooking spray before placing in air fryer.
Preheat air fryer at 360
Place filet on foil in air fryer basket or air fryer dish accessory (check your manual for options).
Cook for 5 minutes on one side, flip with fish spatula, then cook for 3 – 5 minutes on the other side (depending on thickness of filet)
Enjoy your crispy filet!

Variation of Butterfinger Cheesecake Cupcakes from wwPounddropper
In a stand mixer with a whisk attachment, mix the yogurt, eggs, pudding mix, and cocoa powder together until smooth.
Add in the rest of the ingredients and whisk again until fully incorporated.
In a cupcake pan, place the 16 cookies in cupcake liners – either silicone or foil versions.
Scoop mixture into the cupcake liners to about 3/4 full.
Place in a 350 degree oven for 30 minutes then let cool for several hours until set (If you can stop yourself from eating them!)

Episode 10: Zero Point Cake and Ask Us Anything



Here we are! Episode 10 – it’s a super-sized episode! Can you believe it? We are super-excited to bring you this episode – it’s so full of good stuff!

Then, it’s Ask Us Anything! We compiled questions from all of you and they were good ones! Thank you to: @kjturpin, @sabthefoodaddict, @gw_gets_fit and @joshhillwrites_ww from Instagram for your questions, and also to our Connect buddies @europious, @julieinoregon, @mita23, @new_jewelie and @_duchick_ – we appreciate your questions and we had fun answering them.

But the fun doesn’t stop there. We also have Recipe Corner, where you’ll learn we really are just flying by the seat of our pants sometimes. What’s a party without cake? How about ZERO POINT CAKE!! Thanks to a recipe from @Katie_Donnelly_wwjourney, we have learned how to use chickpeas to make a cake. Can’t believe it? Well here it is.

It’s 2 points for the whole cake the way we make it, thanks to the almond extract and the vanilla protein powder but it works out to 0 points per serving, until you’re 3 pieces in. Then it bumps up to 1 point. Have a listen, hear our disasterous road to this recipe, and our thoughts on how it tastes. I mean, chickpeas? What? Then give it a go yourself, and find some fun modifications.

Episode Seven: Craving Roundup



Hello friends! We’re back with Episode Seven and a whole lot of content for you to enjoy.

This week, we tackle our weigh-in ups and downs, which leads us, fittingly, into the “Bounceback” Freestyle conversation. If you’re struggling with a plateau, this is definitely the episode for you, as Tab struggles to make sense of what the heck her body is doing, and Greg tinkers with the numbers to keep himself on track during Maintenance.

We also have a lot of fun discussing our favorite snack-attack solutions. We cover how to handle coffee without going overboard on points, what our favorite sweet-treats are, and some savory solutions to the munchies.

And guess what? It’s time for Greg’s first foray into the Recipe Corner! He dabbled with some pizza fixings and wonton wrappers and our air fryer (just get one, already) and came up with a fun version of pizza rolls. Then he dove back into the kitchen and came up with a sweet version with bananas and sugar-free chocolate chips. It’s bonkers. Just listen.
